Directions
- In a small saucepan over medium heat, combine guava paste, BBQ sauce, rum, and paprika.
- Stir and simmer for 3-5 minutes until slightly thickened. Remove from heat and set aside.
- Brush chicken breasts with the glaze.
- Heat a grill or skillet over medium heat and cook chicken for 5-6 minutes per side.
- In the last few minutes, brush again generously with the guava BBQ rum glaze, allowing it to caramelize.
- Once chicken reaches an internal temperature of 165°F, remove from heat and let it rest for 5 minutes before slicing.
- In a large bowl, combine mixed greens, cherry tomatoes, carrots, cucumbers, feta, and toasted almonds.
- Serve.
