A hearty, oven-baked casserole featuring layers of zesty cilantro lime rice, salsa-marinated chicken, and a melted blend of Monterey Jack and cheddar cheeses.
Prep & Assembly:
- Cover sliced chicken with salsa and allow to marinate for at least 30 minutes.
- Warm marinated chicken as directed.
- Layer rice at the bottom of the container.
- Top with chicken and corn & bean blend.
- Cover with cheese and bake at 350° until warm and cheese is melted and bubbly.
